Clean eating January is one of the most common resolutions these days. It’s not enough to do a month without alcohol; we have to remove all of the delicious foods from our diet for a full month.
I typically can’t imagine a diet without grains, sugar and dairy. But when I eat these brownies it seems more possible. With just six ingredients, they somehow make the perfect dessert and snack. If you’re a peanut butter lover, I’d recommend these any time of year. They’re rich, gooey and chocolatey. All of the best parts of real brownies.
These are a one bowl wonder. Just throw them in the food processor, bake them up and you’re good to go. I’d recommend serving these warm with some banana “ice cream” – blended frozen bananas – and maybe some fresh berries.
