Gluten-Free Cookies – Love!

I have a weak spot for desserts; I always need something sweet to end the meal. As much as I try to eat healthy, there never seems to be a healthy dessert that really satisfies my craving. Fruit just doesn’t do it.

I stumbled upon this recipe for almond coconut cookies, and they happen to be gluten-free and dairy free as well. They don’t taste healthy by any means because they’re hearty, full of protein and even have a hint of chocolate from the cacao nibs. If you don’t have cacao nibs, you can substitute dark chocolate chips. Even though these cookies are made of almond meal, the flavor of almonds doesn’t take over the cookie for me. It’s perfectly balanced with the flakey coconut.
