Slow Cooker Sweet Potato Veggie Chili

Crock pots are kind of like the snow blowers of the kitchen during winter, aggressively taking on the job and getting it done. While they are notoriously amazing for slow cooking meat, that isn’t all they’re good for. Soups and vegetarian chilis are incredible in the slow cooker. The flavors combine, mingling the spices and seasonings together perfectly.

There is no set recipe for the perfect chili. It needs the right amount of spice and that special something to enrich the flavor. My vegetarian chili uses cocoa powder and red wine to kick it up. I also included some canned pumpkin to add a creamier taste, even though it didn’t seem to add any real pumpkin flavor.

This is the perfect size recipe to fit in a variety of ingredients, although that does mean it is enough for many, many servings. It’s hard to get sick of because it’s just so hearty, rich and delicious. Make some for a crowd and freeze the rest.
