Making an End of Summer Pie: Peach Blueberry Cobbler
It’s about time to start taking advantage of those last days of summer. Soak in those beach days, jog out to the lakeshore path, grab another meal alfresco and, of course, take those final bites of fresh, summer produce.
Pies are probably my favorite way to enjoy the seasonal fruits any time of year. There are so many ways to make them – tarts, crumbles and crisps, just to name a few. This peach blueberry cobbler is now at the top of my list. The cake-like topping works perfectly to absorb the juices from the berries, and the peaches are deliciously chewy and sweet.
This is just the right dessert you don’t have to feel too guilty about eating. It’s a beautiful dish to bring to a potluck or just make for no reason at all. You can swap in nectarines, cherries or anything else you can find at your local farmers’ market this time of year.
