Chicken Soup on the Cheap

It's nice how a leg quarter gives you chicken stock

One leg and thigh quarter
2 yellow onions
1/2 pound of carrots
2 sprigs of rosemary.
Salt and pepper to taste
Bring 1 3 qt. stock with water to boil. Add onions carrots and chicken. Low roil for an hour or two… adding the rosemary after 30 minutes. Let cool and refrigerate overnight.
Remove and skim hardened fat off the top. Use instead of water when appropriate. It's not too hot of a soup but works to help wilt spinach, etc.
