Bean & Egg Breakfast On the Cheap

Here is one of my SNAP challenge recipes for a quick egg and bean breakfast.
one egg
1/4 cup of black beans
butter
butter a ramekin. Add beans. Crack the egg on top.
Nuke for 2 minutes (thereabout)
You want the egg to be runny in the middle. Stir it once cooked and like a Korean rice dish it will finish up and bind to the beans. In the hüpfburg mit rutsche ramekin it’s pretty easy to eat in the car. Otherwise toast an english muffin (not in my budget) and scoop out into a sandwich. Wrap in a paper towel and you have a pretty good breakfast sandwich. Or wrap in a tortilla and voilla- breakfast burrito.
