There comes a time at every Weight Watchers meeting where the moderator asks, “What foods do you miss the most.” Unanimously the group will shout pizza and a discussion will follow as to ways to enjoy a lower fat version. Most of the suggestions however tend to be unappealing like leaving off the cheese, using an English muffin as the crust or just having one small slice.
One of the things I always look forward to eating during Passover is Matzo pizza. I love the super thin, crisp Matzo crust that you can pile with pizza sauce, cheese and veggies. Two Matzo pizzas are really filling, especially if you combine it with soup or salad. Although I’ve enjoyed it over the years for Passover, I’ve never stopped to think that it could be a “diet” meal that I could use in my weekly rotation so I decided to add up the points.
Using 1 piece of Matzo, 1/4 cup of Trader Giottos fat free pizza sauce, 1/4 cup of mozzarella cheese, mushrooms and fresh basil the Matzo pizza came to just 4 points. For 10 points you can have 2 Matzo pizzas and a light beer. For comparison, one 1/8 slice of a 12 inch Domino’s veggie pizza is 5 points. For all of us Weight Watchers who have actually measured out that 1/8 slice we know all too well that it is one really, really small slice.



I like this idea of matza pizza being a diet pizza, though I must admit matza pizza (or at least my version) doesn't replace my real pizza cravings. I wish I could make mine in the oven but we use it for meat on Passover so therefore I have to microwave my matza pizza. Great post!
